Recently, I was out of town visiting a friend. One warm morning, we walked to a cafe in his neighborhood and he ordered a cold brew, telling me that the shop made a phenomenal one. As a big fan of pour-over coffee and the occasional latte, I hadn’t ordered a cold brew in years, but I decided to go for it. It was incredibly good, and the next hour consisted mostly of me — a former barista and serious coffee-lover — asking myself why I never make cold brew at home. I returned from that trip resolved to finally get into cold brew this summer.

Cold brew is distinct from iced coffee in that iced coffee sees regular (i.e. hot) coffee poured over ice, while cold brew is, well, brewed cold. It tends to be more balanced and less acidic than hot coffee, making it a beautiful and subtle sip, especially when it’s hot out.
